All you need to make the broth is four thighs; keep the bone in with the thigh. One onion, two carrots, two stalks of celery, two cloves of garlic and salt and pepper to taste. Roughly chop all of the vegetables and put them in a crockpot with the chicken thighs and cover with water. Let cook on low for six to eight hours. Remove the thighs and set aside for future use and strain the liquid from the vegetable. You can store the broth in the refrigerator for about two weeks.
The second use of chicken thighs is fettuccine alfredo
. Dice half of a small onion and saute it with one large clove of minced garlic. Cook the onions and garlic until softened. Then add about one cup of cooked chicken thighs to the pan with onion and garlic. While the chicken is cooking place your fettucini noodles in a pan with boiling water and cook as directed on the package. After about ten minutes add two to three tablespoons of flour to chicken and stir until a thick mixture is formed, and then slowly add two cups of chicken broth and stir until the mixture come to a slow boil. Remove from the heat and let stand for a few moments and then cover the noodles with the sauce. Season with salt and pepper and your favorite cheese then serve.
The final use of chicken thighs is homemade chicken soup. You start with dicing an onion, one carrot, and one stalk of celery. Throw the vegetables in a stock pot or slow cooker with cooked pieces of chicken thighs. You will want to add salt pepper and thyme for the seasoning and cook for up to four hours. Add other types of vegetables or noodles if desired and enjoy on a nice cool day.
