  • 2 cups digestive cookies or graham crackers
  • ½ cup butter (melted)
  • 3 cups fresh apple cider
  • 3 bricks cream cheese (softened)
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup sour cream
  • ¼ teaspoon salt
  • 2 tablespoons powdered sugar

  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • ⅓ cup reduced apple cider
  • 1 teaspoon cinnamon
  • 2 tablespoons all purpose flour

Instructions

  1. Reduce apple cider with mulling spices in a pot until thickened (about 1 hour). Cool.
  2. Preheat oven to 350°F (175°C).
  3. Pulse cookies in a food processor; mix with melted butter and press into an 8” springform pan. Bake for 10 minutes.
  4. Lower oven to 325°F (163°C). Beat cream cheese and brown sugar until smooth; add sour cream, vanilla, salt, cinnamon, and reduced cider.
  5. Mix in eggs one at a time; fold in flour briefly.
  6. Place springform pan in a water bath and pour filling over crust. Bake for about 90 minutes until edges are set.
  7. Cool gradually in the oven for optimal texture; chill for at least 8 hours before serving.
