  • 1/2 cup all-purpose flour (63 grams)
  • 1/2 cup brown sugar (100 grams)
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (56 grams) (melted)
  • 24 ounces full-fat cream cheese (680 grams) (room temperature)
  • 3/4 cup granulated sugar (150 grams)
  • 1/4 cup brown sugar (50 grams)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (120 ml) (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350F (180C).
  2. Prepare a 9-inch springform pan by wrapping it in tin foil and greasing it lightly.
  3. Mix graham crumbs, brown sugar, cinnamon, and melted butter for the crust and press into the bottom of the pan.
  4. For the apple filling, slice apples, toss with brown sugar and cinnamon.
  5. In a mixing bowl, beat cream cheese until smooth, then mix in sugars, sour cream, vanilla, and eggs until just combined.
  6. Layer half of the apple mixture over the crust, pour in cheesecake batter, top with remaining apples and crumble topping.
  7. Bake in a water bath for about 60 minutes or until set.
  8. Cool gradually before chilling overnight.
