- 4 beef short ribs
- 1 pound Italian sausage (cooked and drained)
- 2 cups beef broth
- 2 28-ounce cans whole peeled tomatoes
- 1 cup red wine (plus ¼ cup)
- 1 large onion (chopped)
- 6 garlic cloves (minced)
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- ¼ cup chopped fresh Italian parsley
- ¼ cup extra virgin olive oil
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
Instructions
- Preheat oven to 400°F and combine red wine, olive oil, short ribs, onion, garlic, salt, and pepper in a roasting pan. Roast for 1 hour and 30 minutes.
- Transfer mixture to a stockpot over medium-low heat. Add remaining red wine and simmer for 30 minutes.
- Stir in tomatoes, tomato paste, tomato sauce, beef broth, and herbs; simmer uncovered for 4 to 6 hours.
- After reducing, remove ribs and mix in cooked sausage; simmer an additional hour.
