  • 4 beef short ribs
  • 1 pound Italian sausage (cooked and drained)
  • 2 cups beef broth
  • 2 28-ounce cans whole peeled tomatoes
  • 1 cup red wine (plus ¼ cup)
  • 1 large onion (chopped)
  • 6 garlic cloves (minced)
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • ¼ cup chopped fresh Italian parsley
  • ¼ cup extra virgin olive oil
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano

Instructions

  1. Preheat oven to 400°F and combine red wine, olive oil, short ribs, onion, garlic, salt, and pepper in a roasting pan. Roast for 1 hour and 30 minutes.
  2. Transfer mixture to a stockpot over medium-low heat. Add remaining red wine and simmer for 30 minutes.
  3. Stir in tomatoes, tomato paste, tomato sauce, beef broth, and herbs; simmer uncovered for 4 to 6 hours.
  4. After reducing, remove ribs and mix in cooked sausage; simmer an additional hour.
  5. Serve over your favorite pasta.
