Ingredients

  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (cajun or andouille)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • Olive oil
  • Salt
  • Pepper
  • Smoked paprika
  • Fresh thyme

Instructions

  1. Preheat oven to 200°C (400°F).
  2. On a baking sheet, toss butternut squash with olive oil, salt, and pepper; roast for 15-20 minutes.
  3. Toss Brussels sprouts with olive oil, salt, and pepper on another baking sheet; roast for 20-30 minutes until crispy.
  4. Cook bow tie pasta in salted boiling water until al dente; drain and reserve some pasta water.
  5. In a large skillet over medium heat, brown sliced sausage in olive oil; remove from skillet.
  6. In the same skillet, sauté garlic until fragrant; add butter and melt.
  7. Toss in cooked pasta with garlic butter; season with salt, pepper, and smoked paprika.
  8. Gently mix in roasted squash, Brussels sprouts, cooked sausage, and fresh thyme.
