Ingredients
- 2 large baking potatoes
- 1 block (200g) feta cheese
- 2 tbsp olive oil
- 1 head of garlic
- 1 lemon (quartered)
- Dried thyme
- Dried oregano
- Salt
- Black pepper
- Red chili flakes
- Fresh basil
- Honey for finishing
Instructions
- Preheat your oven to 200C (390F).
- Wash and cube the potatoes. Par-boil in salted water for 6-8 minutes, then drain.
- Toss par-boiled potatoes with olive oil and seasonings in a baking dish.
- Roast for 30-40 minutes until golden brown and crispy.
- Add feta cheese and squeeze half a lemon over it; roast for another 15 minutes.
- Squeeze roasted garlic into a bowl; mash and mix with the potatoes along with lemon juice and fresh basil.
- Drizzle honey over the dish before serving.
