Ingredients

Scale
  • 4 salmon fillets (about 4 ounces each)
  • 1 batch teriyaki sauce (homemade or store-bought)
  • 2 cups cooked rice
  • 2 cups cooked broccoli
  • 1/3 cup diced scallion

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly oil the bottom of a baking dish.
  3. Place salmon fillets skin-side down in the dish and coat with half of the teriyaki sauce using a silicone brush.
  4. Optionally, let salmon marinate for 20 minutes for enhanced flavor.
  5. Bake uncovered for 12-18 minutes until flaky; cubed salmon cooks faster at about 10-14 minutes.
  6. For added crispiness, broil for a couple of minutes if desired.
  7. Drizzle remaining teriyaki sauce over salmon before serving and garnish as desired.
