  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil (divided)
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into 1/2" chunks and chop onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder in a mixing bowl.
  3. Spread sweet potatoes and onions on a lined baking sheet and roast for 20 minutes, stirring halfway through.
  4. Push the sweet potatoes to one side of the pan and add chopped broccoli tossed with olive oil and salt to the other side.
  5. Place chicken breasts on top and brush with 1/4 cup BBQ sauce.
  6. Bake for an additional 15-20 minutes until chicken is cooked through.
  7. Shred chicken in the pan using two forks; toss with remaining BBQ sauce. Serve in bowls.
