Ingredients
- 2 medium sweet potatoes
- 1 large yellow onion
- 1 tablespoon olive oil (divided)
- 1/4 teaspoon salt (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder (or chili powder)
- 1 medium head broccoli
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop sweet potatoes into 1/2" chunks and chop onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder in a mixing bowl.
- Spread sweet potatoes and onions on a lined baking sheet and roast for 20 minutes, stirring halfway through.
- Push the sweet potatoes to one side of the pan and add chopped broccoli tossed with olive oil and salt to the other side.
- Place chicken breasts on top and brush with 1/4 cup BBQ sauce.
- Bake for an additional 15-20 minutes until chicken is cooked through.
- Shred chicken in the pan using two forks; toss with remaining BBQ sauce. Serve in bowls.
