  • 34 cups broccoli florets
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/2 teaspoon apple cider vinegar or rice vinegar
  • 1/2 teaspoon toasted sesame oil
  • 1/4 cup (packed) brown sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon grated fresh ginger
  • 4 cloves garlic (minced)
  • 1/4 teaspoon crushed red pepper flakes (or more, to taste)
  • 2 tablespoons olive oil (divided)

Instructions

  1. Trim and slice the flank steak against the grain into thin pieces.
  2. Whisk together soy sauce, water, vinegar, sesame oil, brown sugar, cornstarch, ginger, and garlic in a bowl.
  3. Heat 1 tablespoon olive oil in a large skillet over high heat. Add broccoli and stir-fry for 4-5 minutes until tender-crisp. Remove and set aside.
  4. Add remaining olive oil to the skillet. Cook beef in a single layer for about 2 minutes until slightly rare.
  5. Return broccoli to skillet, pour in the sauce, and cook until thickened (1-3 minutes). Serve immediately.
