  • 1 lb ground beef (85% lean)
  • 3/4 cup onions (diced)
  • 1 Tbsp garlic (minced)
  • 2 1/2 cups beef broth
  • 1 1/4 cups uncooked long grain white rice
  • 8 oz sliced button mushrooms
  • 10.5 oz cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 cups cheddar cheese (divided)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, brown the ground beef over medium-high heat with Italian seasoning, salt, and pepper; drain excess grease.
  3. Sauté onions in the same pot until softened; add garlic and cook for another minute.
  4. Stir in beef broth and rice; bring to a boil then cover and simmer for about 10 minutes.
  5. Layer sliced mushrooms on top of the rice without stirring; cover and cook for an additional 5-10 minutes until rice is tender.
  6. Remove from heat and let sit covered for 10 minutes.
  7. Combine cooked beef, cream of mushroom soup, milk, sour cream, and half of the cheese into the rice mixture.
  8. Transfer to a greased casserole dish, top with remaining cheese, and bake covered for about 20 minutes until bubbly.
