  • 2.5 kg / 5 lb standing rib roast (bone-in)
  • 150g unsalted butter (softened)
  • 5 garlic cloves (minced)
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 head of garlic (halved)
  • Fresh thyme and rosemary
  • 1.5 cups beef broth
  • 2.5 cups dry red wine

Instructions

  1. Preheat the oven to a moderate temperature.
  2. Prepare the herb garlic butter by mixing softened butter with minced garlic, salt, and pepper.
  3. Rub the mixture generously over the standing rib roast.
  4. Place quartered onion and halved garlic in a roasting pan with sprigs of thyme and rosemary.
  5. Set the seasoned roast on top of the aromatics.
  6. Insert a meat thermometer into the thickest part of the roast and cook until your desired doneness is reached, around two hours.
  7. Let the roast rest for at least twenty minutes before slicing against the grain.
