Ingredients

  • 2 cups blueberries
  • 8 ounces unsweetened coconut milk
  • 1/4 cup coconut water
  • Pure maple syrup (to taste)

Instructions

  1. Prepare the strawberry puree by blending strawberries with coconut water until smooth; sweeten if desired.
  2. Repeat with blueberries for the blueberry puree.
  3. In a bowl, whisk together coconut milk and maple syrup until well combined.
  4. Layer the strawberry puree into popsicle molds (about 1/3 full) and freeze for 10 minutes.
  5. Add the coconut milk layer, freeze for another 10 minutes.
  6. Top with blueberry puree and insert sticks; freeze overnight or at least 8 hours until solid.
  7. To serve, dip molds in warm water for easy release.
