  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)
  • Oil spray for pan

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, combine oil, eggs, sugar, vanilla extract, and pumpkin puree until well mixed.
  4. Stir in chocolate chips.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Spray an 8" x 4" loaf pan with oil and pour in the batter.
  7. Sprinkle remaining chocolate chips on top.
  8. Bake for 50–60 minutes or until a toothpick comes out clean from the center.
