  • 1 cup beer
  • 1/4 cup apple cider vinegar
  • 1/4 cup beef stock
  • 5 tbsp melted butter
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp paprika
  • 2 tbsp chili powder
  • 2 tbsp kosher salt
  • 2 tbsp coarse ground black pepper
  • 1 tbsp brown sugar

Instructions

  1. Preheat your Traeger grill to Smoke mode. After establishing the fire, set it to 225°F.
  2. Mix together all rub ingredients in a small bowl.
  3. Generously season the brisket with the rub on all sides.
  4. Place brisket fat side down on the grill grate and cook until it reaches an internal temperature of 160°F (about 3-4 hours).
  5. Prepare the baste by mixing beer, apple cider vinegar, beef stock, and melted butter.
  6. Wrap brisket in foil once it hits 160°F and pour in the baste.
  7. Return wrapped brisket to the grill and continue cooking until it reaches an internal temperature of 204°F (another 3-4 hours).
  8. Let rest for at least 15 minutes before slicing against the grain.
