  • 2 tablespoons olive oil

  • ¼ teaspoon black pepper (freshly ground)
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 quart vegetable broth
  • ¼ to ½ cup heavy cream (optional)

Instructions

  1. Preheat your oven to 450°F. Lightly grease a baking sheet.
  2. On the baking sheet, combine tomatoes, onion, and garlic with olive oil, salt, and pepper. Toss well.
  3. Roast for about 30 minutes until softened and caramelized, stirring halfway through.
  4. Blend the roasted mixture with fresh basil until smooth.
  5. In a pot over medium heat, melt butter and whisk in flour to form a roux. Cook for 1-2 minutes until golden.
  6. Gradually whisk in vegetable broth; then add the blended mixture and sugar. Simmer for 10 minutes.
