  • 2 large eggs

  • 8 oz cream cheese
  • 2 teaspoons vanilla extract
  • 1/4 cup granulated sugar
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or melted butter), and vanilla extract until smooth. Gradually mix in the dry ingredients until just combined.
  4. In another bowl, beat cream cheese until smooth; add sugar, egg yolk, and vanilla extract until blended.
  5. Spoon muffin batter into prepared cups about 3/4 full. Add a dollop of cream cheese mixture on top and swirl gently with a toothpick.
