  • ¾ cup peach preserves
  • ¼ cup bourbon
  • 4 salmon fillets (about 1½ pounds)
  • 2 medium peaches, sliced
  • Olive oil
  • Soy sauce
  • Apple cider vinegar
  • Dijon mustard
  • Garlic
  • Kosher salt
  • Black pepper
  • Red pepper flakes

Instructions

  1. In a bowl, mix peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes to create the marinade.
  2. Marinate the salmon fillets in half of the mixture for at least 30 minutes in the refrigerator.
  3. Preheat your oven to 375°F (190°C).
  4. Sear the salmon skin-side up in an oven-safe skillet over medium-high heat for 2-3 minutes.
  5. Flip the salmon and add sliced peaches around it; cook for another 2-3 minutes.
  6. Pour reserved marinade over the salmon and peaches.
  7. Bake in the oven for 12-15 minutes until cooked through (145°F/63°C).
