  • 1/4 cup vegan butter
  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 3 heaping cups broccoli (finely chopped)
  • 1 1/2 heaping cups julienned carrots
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt the vegan butter in a large pot over medium heat.
  2. Sauté chopped onions and garlic until soft and fragrant, about 5–7 minutes.
  3. Add flour to create a roux, mixing well until fully incorporated.
  4. Gradually whisk in vegetable broth and rice milk until the roux dissolves.
  5. Bring to a boil then reduce heat; add broccoli and carrots. Cook until tender, about 10 minutes.
  6. Stir in vegan cheddar cheese until melted.
  7. Blend a portion of the soup for creaminess, then return it to the pot.
  8. Season with salt and pepper to taste before serving.
