  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a stand mixer, cream together butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla, mixing until well combined.
  3. In another bowl, whisk dry ingredients; gradually add to wet mixture while mixing until just combined. Chill dough for one hour.
  4. Prepare the filling by mixing all filling ingredients until smooth.
  5. Scoop chilled dough into portions, create wells for filling, and seal them before placing on baking sheets.
  6. Bake for about 11–13 minutes until edges are lightly golden. Cool on racks.
  7. Prepare icing by combining all icing ingredients until smooth; drizzle over cooled cookies.
