  • 1 (12-ounce) can of beer (optional)
  • 3 tablespoons Creole Cajun seasoning
  • 1 tablespoon Old Bay seasoning
  • 1 medium yellow onion
  • 1 large lemon
  • 12 ounces andouille sausage
  • 1 lb baby potatoes
  • 1 lb pre-cooked snow crab leg clusters
  • 11.5 lbs jumbo shrimp
  • 46 ears sweet corn
  • 1 cup unsalted butter
  • 10 cloves garlic

Instructions

  1. In a large stockpot over medium-high heat, bring water and beer to a boil. Season with Cajun spices, add sliced onion and lemon wedges; boil for 15 minutes.
  2. Add sliced sausage and potatoes; cook for about 15-20 minutes until fork-tender.
  3. Gently add snow crab clusters, shrimp, and corn. Boil for an additional 5-7 minutes until shrimp are pink.
  4. For the garlic butter sauce, melt butter in a small saucepan over medium heat with minced garlic and lemon juice; simmer for about 5 minutes.
  5. Remove seafood using a spider strainer; serve on a baking sheet or individual plates. Drizzle garlic butter sauce over the top.
