- 2 cups graham cracker crumbs

- 3 medium Granny Smith apples (peeled and diced)
- 2 tbsp lemon juice
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup unsalted butter (cold and cubed)
- 1/4 cup chopped pecans (optional)
- 1 cup granulated sugar (for caramel sauce)
- 1/4 cup water (for caramel sauce)
- 1/2 cup heavy cream (for caramel sauce)
- 2 tbsp unsalted butter (for caramel sauce)
- 1/4 tsp salt (for caramel sauce)
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
- In a bowl, mix together graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press this mixture into the bottom of the prepared pan and bake for 10 minutes.
- Beat softened cream cheese and granulated sugar in another bowl until smooth. Add eggs one at a time and stir in vanilla.
- Combine diced apples with lemon juice, brown sugar, cinnamon, and nutmeg in a separate bowl.
- Pour half of the cheesecake mixture over the crust, layer with apple mixture, then top with remaining cheesecake filling.
- Prepare the topping by mixing flour with brown sugar and cutting in cold butter until crumbly; sprinkle on top.
- Bake for about 45 minutes until edges are set but center is slightly jiggly. Allow to cool completely before drizzling with caramel sauce.
