Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In one bowl, mix melted butter and brown sugar. Add the egg and vanilla; stir until combined.
  3. In another bowl, whisk flour, cinnamon, baking powder, and salt. Gradually combine with the wet mixture, then fold in shredded carrots.
  4. For the cream cheese topping, beat cream cheese until smooth; mix in granulated sugar, egg yolk, and vanilla.
