  • ¾ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 cups shredded carrots
  • 8 oz cream cheese (cold)
  • 8 Tbsp butter (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 375°F and line a jelly roll pan with parchment paper.
  2. In one bowl, combine flour, baking powder, baking soda, salt, and spices. In another bowl, whisk eggs, sugar, oil, and vanilla until smooth.
  3. Gradually mix in dry ingredients followed by shredded carrots. Spread into the prepared pan.
  4. Bake for 10–13 minutes until springy; then roll immediately while warm in the parchment paper and let cool for about 10 minutes.
  5. For the frosting, beat cream cheese until smooth; add butter gradually and mix in powdered sugar and vanilla.
  6. Unroll the cooled cake gently, spread frosting over it (leave an edge), then re-roll tightly and chill for at least an hour before slicing.
