  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 (10 oz) can enchilada sauce (red or green)
  • 2 cups shredded cheese (mozzarella & cheddar)
  • ¼ cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Cook the tortellini according to package directions; drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Add chopped onion and minced garlic; sauté for 2–3 minutes until softened.
  4. Stir in chili powder, cumin, paprika, salt, and pepper; cook for another minute.
  5. Pour in enchilada sauce and simmer for 5 minutes before adding tortellini.
  6. Top with shredded cheeses and cover; cook on low heat until melted (2–3 minutes).
  7. Stir in sour cream and garnish with cilantro before serving.
