  • 2 pounds russet potatoes (peeled & diced)
  • 1 pound lean ground beef
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 1 cup frozen mixed vegetables
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup milk (2% recommended)
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese (divided)

Instructions

  1. Preheat the oven to 400°F.
  2. Spread diced potatoes evenly in a greased 9×13 casserole dish.
  3. Brown ground beef and onions in a skillet over medium heat; drain excess fat.
  4. Add minced garlic and frozen vegetables to the skillet; cook briefly then transfer to the casserole dish.
  5. In a mixing bowl, combine cream of mushroom soup, milk, sour cream, Worcestershire sauce, Italian seasoning, and half of the cheddar cheese; mix well.
  6. Pour the sauce over the meat and potatoes; gently stir to combine.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil, add remaining cheddar cheese on top, bake uncovered for an additional 10-15 minutes until cheese melts.
  9. Let it rest for 5-10 minutes before serving.
