  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)

Instructions

  1. In a large skillet over medium-high heat, add olive oil, ground beef, and onion. Cook until the beef is browned and onions are translucent (about 8–10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for an additional 30 seconds.
  3. Add beef broth, Rotel, and tomato paste. Bring to a boil.
  4. Stir in rice and return to a boil. Cover the skillet and reduce heat to medium-low; cook for about 15 minutes until rice is tender.
  5. Sprinkle shredded cheese on top and cook for another 5 minutes until melted.
  6. Serve hot with desired toppings like sour cream or guacamole.
