  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)
  • 1/2 cup all-purpose flour for topping
  • 1/3 cup brown sugar for topping
  • 1/2 teaspoon ground cinnamon for topping
  • 1/4 cup cold unsalted butter, diced for topping

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.
  2. In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix milk, vegetable oil, egg, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed; fold in cherries.
  5. Prepare streusel by mixing flour, brown sugar, cinnamon, and butter until crumbly.
  6. Fill muffin cups with batter and top with streusel.
  7. Bake for 20–25 minutes until a toothpick comes out clean.
