- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, mix granulated sugar with pumpkin pie spice for the topping.
- Cream together the softened butter and light brown sugar until fluffy.
- Beat in egg yolks and vanilla extract, then fold in the pumpkin puree.
- In another bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice. Gradually mix into the wet ingredients until combined.
- Scoop rounded tablespoons of dough onto the prepared baking sheet and sprinkle with spiced sugar topping.
