  • 1 (12 oz) can evaporated milk
  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken (or 1.5 lbs raw chicken)
  • Fresh thyme, black pepper, salt
  • 2 cups all-purpose flour (for the dumplings)
  • 1 tablespoon, plus 1 teaspoon, baking powder (for the dumplings)
  • 3/4 cup (6 oz) whole milk (for the dumplings)
  • 4 tablespoons butter (melted, for the dumplings)

Instructions

  1. Sauté the onion, carrots, and celery in butter until softened. Add garlic and cook for an additional minute.
  2. Stir in flour to form a roux; gradually add evaporated milk and chicken stock while stirring constantly until thickened.
  3. Add shredded cooked chicken or raw chicken with extra broth. Simmer until chicken is cooked through; shred if using raw.
  4. In a separate bowl, mix dumpling ingredients until just combined. Drop spoonfuls into the simmering soup and cover until cooked.
