  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese, optional

Instructions

  2. Slice chicken breasts in half horizontally and pound to even thickness.
  3. Marinate chicken in olive oil, garlic, Italian seasoning, salt, and pepper for 15-30 minutes.
  4. Sauté spinach in remaining olive oil until wilted; then combine with cream cheese and half the mozzarella.
  5. Arrange marinated chicken in the baking dish, top with cream cheese mixture, and sprinkle remaining mozzarella.
  6. Bake for 20-30 minutes until cooked through (165°F) and cheese is golden brown.
