  • 68 thin sliced chicken breasts
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1 Tbs hot sauce
  • Oil for frying
  • 1/4 cup reserved oil from frying
  • 1/3 cup flour for gravy
  • 2 cups milk for gravy
  • Salt & pepper for gravy

Instructions

  1. Heat oil in a deep fryer or large pan to 325°F.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
  3. In another bowl, mix buttermilk, egg, and hot sauce.
  4. Dredge each chicken piece in the dry mixture, followed by the wet mixture, then back to the dry mixture.
  5. Fry chicken until golden brown on both sides (about 3-5 minutes per side).
  6. For gravy, use reserved oil to create a roux with flour; gradually add milk and whisk until thickened.
  7. Serve chicken topped with gravy.
