  • 1 1/2 pounds chicken breasts (sliced)
  • 6 tablespoons brown sugar
  • 6 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 4 teaspoons chili garlic sauce or sriracha
  • Juice of 1 lime
  • Fresh cilantro and chopped peanuts for garnish

Instructions

  1. Prepare the sauce by mixing brown sugar, soy sauce, rice vinegar, chili garlic sauce (or sriracha), and lime juice in a bowl.
  2. Cook the Thai rice noodles according to package instructions; drain and set aside.
  3. In a non-stick skillet over medium-high heat, cook sliced chicken until fully cooked, then remove.
  4. Scramble the beaten eggs in the same skillet; set aside.
  5. Sauté sliced red bell pepper for 1-2 minutes; add bean sprouts and matchstick carrots, cooking for another 1-2 minutes.
  6. Combine cooked noodles, chicken, scrambled eggs, and sauce in the skillet; toss to heat through.
  7. Serve garnished with chopped peanuts and fresh cilantro.
