Ingredients
- 8 oz dark chocolate melting wafers
- 4 oz white chocolate melting wafers
- 1 cup all-purpose flour
- 1 cup sugar
- 6 tbsp Hershey’s Special Dark Cocoa powder
- 1 large egg
- 1/2 cup milk
- 1/2 cup vegetable oil
- 3/4 cup chopped strawberries (for the cupcakes)
- 1/2 cup salted butter (for frosting)
- 4 cups powdered sugar
Instructions
- Prepare chocolate-covered strawberries by dipping washed strawberries in melted dark chocolate, letting them cool on parchment paper. Drizzle with melted white chocolate.
- Preheat oven to 300°F (148°C) and line cupcake pan with liners.
- In a bowl, mix flour, sugar, cocoa powder, baking soda, and salt. In another bowl, combine egg, milk, oil, and vanilla extract.
- Mix wet and dry ingredients together; gradually add hot water until smooth.
- Fill cupcake liners halfway and bake for 18–23 minutes until a toothpick comes out clean.
- For frosting, puree strawberries and strain to remove seeds. Beat butter and shortening until creamy; gradually add powdered sugar and strawberry puree.
- Once cooled, frost cupcakes and top with chocolate-covered strawberries.
