Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder (Dutch process)
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 2 egg yolks
- 1 1/2 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
- nonpareils for sprinkling on top (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In one bowl, mix flour, cocoa powder, salt, and baking powder. In another bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add egg yolks and vanilla; blend well.
- Gradually combine dry ingredients with the wet mixture until just combined. Scoop tablespoons of dough onto the prepared baking sheet and create an indentation in each cookie.
- Bake for about 10 minutes until set but soft in the center.
- Prepare the ganache by heating cream until simmering; pour over chocolate chips and stir until smooth.
- Once cookies have cooled, fill each thumbprint with ganache.
