- 1 tbsp sugar
- 1 tsp curry powder
- 1/2 tbsp chili powder (optional)
- 1/4 cup olive oil
- 1.5 to 2 tbsp vegetarian mushroom oyster sauce
- 1 tbsp dark soy sauce
- 2 tbsp lime juice
Instructions
- Cook the dry noodles according to package instructions until slightly chewy; rinse under cold water and set aside.
- In a heatproof bowl, combine cilantro, garlic, shallot, curry powder, sugar, and chili powder.
- Heat olive oil in a pot until it bubbles; pour over the cilantro mixture and mix thoroughly.
- Add mushroom oyster sauce, dark soy sauce, and lime juice; stir well.
- Toss in the cooked noodles until evenly coated with the sauce.
- Adjust seasoning if necessary and serve hot.
