  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup almond or oat milk
  • 1 1/2 cups all-purpose flour (regular or gluten-free)
  • 1 cup rolled oats
  • 4 tbsp light brown sugar
  • 2 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla until smooth.
  3. In another bowl, combine baking powder, baking soda, cinnamon, salt, and flour; then gradually blend into the wet ingredients.
  4. For the cinnamon swirl, mix oats with melted vegan butter, brown sugar, and cinnamon.
  5. In a greased loaf pan, layer half of the banana batter followed by half of the cinnamon mixture; repeat.
  6. Bake for approximately 45 minutes or until a toothpick comes out clean.
  7. Cool slightly before glazing with a mixture of powdered sugar, melted vegan butter, and cream cheese.
