- 5 strips bacon
- 3 1/2 lbs beef chuck
- 4 tablespoons unsalted butter
- 1 yellow onion
- 3 large carrots
- 5 garlic cloves
- 2 cups Burgundy wine
- 2 cups beef stock
- 1 tablespoon Better than Bouillon beef bouillon
- 2 sprigs fresh thyme
- 2 bay leaves
- 10 oz frozen pearl onions
- 16 oz cremini mushrooms
- kosher salt
- freshly cracked pepper
Instructions
- Preheat your oven to 350°F.
- Cook the chopped bacon in a Dutch oven over medium-low heat until browned. Remove bacon and set aside.
- Season the beef with salt and pepper, then sear in batches until browned on all sides, removing each batch once done.
- Sauté chopped onion and carrots in butter, add minced garlic, tomato paste, and flour, stirring well.
- Add Burgundy wine to deglaze the pot, scraping up browned bits. Stir in beef stock, bouillon, thyme, and bay leaves.
- Return bacon and beef to the pot; cover and transfer to the oven for 2 1/2 hours.
- In the last half hour of cooking, sauté mushrooms and pearl onions in remaining butter before adding them to the stew.
- Let rest for 30 minutes before serving.
