  • 1/3 cup cake flour (for streusel)

  • 4 tbsp cold butter (cubed, for streusel)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 baking dish.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add egg and vanilla; mix well.
  4. Alternate adding dry ingredients and milk to the butter mixture until just combined.
  5. Gently fold in blueberries.
  6. Spread batter into the prepared dish.
  7. For streusel topping, mix sugar, flour, cinnamon, and cubed butter until crumbly; sprinkle over the batter.
  8. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
