Ingredients
- 1 lb dried red beans
- 1 ham bone (or ham hocks)
- 14 oz andouille sausage, sliced
- ½ lb smoked ham, cubed
- 1 medium onion, chopped
- 6 cloves garlic, minced
- ¼ cup red wine vinegar
- 2 tbsp whole grain mustard
- Spices: thyme, black pepper, cayenne pepper
- Steamed white rice for serving
Instructions
- Soak the beans overnight in water.
- In a large stock pot, combine soaked beans, ham bone, bay leaves, and water; bring to a simmer.
- In a skillet, brown the sausage and cubed ham over medium-high heat for about 8–10 minutes.
- Add chopped onion and jalapenos; sauté until softened.
- Stir in diced tomato, garlic, mustard, vinegar, salt, thyme seeds, black pepper, and cayenne; cook until heated through.
- Transfer the mixture to the stock pot with beans; stir gently and simmer uncovered for approximately three hours.
- Smash some beans against the pot side ten minutes before finishing to thicken the dish.
- Remove bones and bay leaves; serve hot over rice with scallions and hot sauce.
