  • 1 pound salmon fillets (or any preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano pepper (or 2 jalapeños), sliced
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • Sweet paprika
  • Hot paprika
  • Salt
  • Cumin
  • Turmeric
  • Fresh cilantro
  • Water

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add the bell pepper, serrano pepper, carrots, potatoes (if using), and garlic. Sauté for 2–3 minutes.
  2. Stir in tomato paste and spices. Cook for another 2–3 minutes before adding half of the cilantro and water. Cover and simmer for 12–15 minutes until the veggies are tender.
  3. Season the salmon fillets with salt and place them into the pan, spooning sauce over them. Cook covered on low heat for 20–25 minutes, basting halfway through.
  4. Garnish with remaining cilantro and lemon slices before serving.
