  • ¼ teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup sour cream (room temperature)
  • 2 tablespoons milk (room temperature)
  • 1/2 cup brown sugar (for streusel topping)
  • 2 teaspoons ground cinnamon (for streusel topping)
  • 1/4 teaspoon sea salt (for streusel topping)
  • 1 1/2 cups powdered sugar (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)
  • 1/8 teaspoon sea salt (for glaze)
  • 23 tablespoons heavy cream (for glaze)

Instructions

  1. Preheat oven to 400°F and line a muffin pan with liners.
  2. In one bowl, mix dry ingredients: flour, granulated sugar, brown sugar, cinnamon, and salt.
  3. In another bowl, beat together butter (cubed and melted), oil, granulated sugar, vanilla extract, eggs, sour cream, and milk until well combined.
  4. Gradually fold the dry mixture into the wet ingredients until just combined.
  5. Prepare the streusel topping by mixing brown sugar, cinnamon, salt, and butter until crumbly.
  6. Fill muffin liners two-thirds full with batter and top generously with streusel.
  7. Bake for 18 minutes or until a toothpick comes out clean.
  8. Cool slightly before glazing with powdered sugar mixed with heavy cream.
