  • 1 lb shrimp, deveined
  • 8 oz linguine
  • 1 tbsp oil
  • 1 tsp Cajun seasoning
  • 1 cup half and half
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Chopped parsley for garnish
  • Diced roma tomato for garnish

Instructions

  1. Dry the shrimp with a paper towel and season with salt, pepper, and half a teaspoon of Cajun seasoning.
  2. Boil water in a pot and cook linguine according to package instructions until al dente.
  3. In a large pan over medium heat, melt oil and butter, then add shrimp in an even layer. After 2 minutes, add garlic; cook until shrimp are pink.
  4. Stir in half and half and parmigiano reggiano; whisk until smooth and bring to a low boil for about 2 minutes.
  5. Add cooked linguine, diced tomato, chopped parsley, remaining Cajun seasoning, and lemon juice (if using). Mix well until combined.
  6. Serve warm with extra parsley on top.
