  • 300 g rigatoni (or another type of short pasta)
  • 1 tablespoon olive oil
  • 170 g chorizo (sliced)
  • 350 g chicken breast (diced)
  • 1 small red onion (finely diced)
  • 1 small red pepper (diced)
  • 3 garlic cloves (minced)
  • 200 ml chicken stock
  • 200 ml double cream
  • Fresh basil and parsley for garnish

Instructions

  1. Cook rigatoni according to package instructions until al dente. Reserve a cup of pasta water before draining.
  2. In a large deep pan, heat olive oil over medium-high heat. Add chorizo and fry for 1-2 minutes until crispy.
  3. Add diced chicken to the pan, cooking for about 4-5 minutes until cooked through.
  4. Stir in red onion and red pepper, cooking for an additional 2-3 minutes until softened.
  5. Mix in minced garlic, followed by chicken stock and double cream. Let simmer for a few minutes until slightly thickened.
  6. Combine pasta with sauce, tossing to coat evenly. Add reserved pasta water as needed.
  7. Garnish with fresh basil, parsley, and Parmesan cheese before serving.
