Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss halved baby potatoes with olive oil, salt, and pepper, making sure they are evenly coated. Spread in a single layer on the baking sheet.
  3. Roast for 25-30 minutes until tender and golden brown, flipping halfway through.
  4. Meanwhile, melt butter in a skillet over medium heat. Sauté minced garlic for 1-2 minutes until fragrant.
  5. Add heavy cream and simmer for 3-4 minutes until slightly thickened. Stir in Parmesan cheese until melted.
