- 4 salmon fillets (skin off)
- 2 tablespoons butter
- 6 cloves garlic, diced
- 1 yellow onion, diced
- 5 ounces sun-dried tomato strips
- 1 3/4 cups half-and-half
- 3 cups baby spinach leaves
- 1/2 cup grated parmesan cheese
Instructions
- Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the salmon for about 5 minutes on each side until cooked to your liking. Remove and set aside.
- In the same skillet, melt butter and sauté garlic and onion until fragrant. Add sun-dried tomatoes and cook for an additional couple of minutes.
- Lower the heat and add half-and-half, stirring occasionally until it simmers. Season with salt and pepper.
- Stir in spinach until wilted, then mix in parmesan cheese until melted.
- Return salmon to the pan, spooning sauce over each fillet before serving.
