  • 4 salmon fillets (skin off)
  • 2 tablespoons butter
  • 6 cloves garlic, diced
  • 1 yellow onion, diced
  • 5 ounces sun-dried tomato strips
  • 1 3/4 cups half-and-half
  • 3 cups baby spinach leaves
  • 1/2 cup grated parmesan cheese

Instructions

  1. Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the salmon for about 5 minutes on each side until cooked to your liking. Remove and set aside.
  2. In the same skillet, melt butter and sauté garlic and onion until fragrant. Add sun-dried tomatoes and cook for an additional couple of minutes.
  3. Lower the heat and add half-and-half, stirring occasionally until it simmers. Season with salt and pepper.
  4. Stir in spinach until wilted, then mix in parmesan cheese until melted.
  5. Return salmon to the pan, spooning sauce over each fillet before serving.
