  • 2 large chicken breasts
  • Salt & pepper
  • Flour (for dredging)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 12 ounces sliced mushrooms (cremini or white)
  • 1/4 teaspoon Italian seasoning
  • 3 cloves minced garlic
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy cream

Instructions

  1. Slice the chicken breasts in half lengthwise and season with salt and pepper. Dredge each piece in flour.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, melt butter and sauté sliced mushrooms with Italian seasoning until seared. Remove from the pan.
  4. Add minced garlic, chicken broth, lemon juice, and Dijon mustard to the skillet; reduce by half.
  5. Stir in heavy cream, then return the chicken and mushrooms to the pan. Simmer for about 5 minutes until heated through and sauce thickens.
