  • 1 lb rigatoni pasta
  • 1 lb ground beef (80/20)
  • 2 cups heavy cream
  • 1 cup beef broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Cook the rigatoni according to package instructions in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, sauté diced onion in olive oil until softened, about 3–4 minutes. Add minced garlic and cook for another minute.
  3. Add ground beef to the skillet, breaking it apart as it cooks until browned (6–8 minutes). Drain excess grease.
  4. Stir in tomato paste and Italian seasoning; cook for 2–3 minutes.
  5. Pour in beef broth and heavy cream; simmer for 5–7 minutes until thickened.
  6. Stir in Parmesan and mozzarella until melted and smooth.
  7. Toss cooked rigatoni into the sauce, adding reserved pasta water as needed for desired consistency.
  8. Serve hot, garnished with fresh parsley or basil.
