Ingredients
- 1 lb rigatoni pasta
- 1 lb ground beef (80/20)
- 2 cups heavy cream
- 1 cup beef broth
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
Instructions
- Cook the rigatoni according to package instructions in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, sauté diced onion in olive oil until softened, about 3–4 minutes. Add minced garlic and cook for another minute.
- Add ground beef to the skillet, breaking it apart as it cooks until browned (6–8 minutes). Drain excess grease.
- Stir in tomato paste and Italian seasoning; cook for 2–3 minutes.
- Pour in beef broth and heavy cream; simmer for 5–7 minutes until thickened.
- Stir in Parmesan and mozzarella until melted and smooth.
- Toss cooked rigatoni into the sauce, adding reserved pasta water as needed for desired consistency.
- Serve hot, garnished with fresh parsley or basil.
