- 1 lb Italian sausage (deboned)
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese (grated)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp olive oil
- 2 quarts chicken stock
- 1 cup ditalini pasta
- 1/2 tsp each dried basil and oregano
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the deboned Italian sausage and cook until browned, breaking it up as it cooks. Remove the sausage and set aside.
- In the same pot, sauté chopped onion until translucent, then add minced garlic and cook for an additional minute.
- Stir in diced tomatoes with juices, chicken stock, dried herbs, and return the sausage to the pot. Simmer for about 10 minutes.
- Add ditalini pasta to the pot and cook until al dente according to package instructions (about 8-10 minutes).
- Reduce heat to low; stir in heavy cream and grated Parmesan cheese until melted and well combined. Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
