  • 2 boneless, skinless chicken breasts (or 4 chicken thighs)
  • 1 cup white or brown rice
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • ½ small onion, diced
  • Olive oil and butter for cooking

Instructions

  1. Prepare the rice: In a saucepan, boil 2 cups broth or water. Add rice and salt, cover, reduce heat, and simmer until cooked (15 minutes for white rice; 35 minutes for brown rice). Fluff with a fork.
  2. Season the chicken with garlic powder, paprika, salt, and pepper. In a large skillet, heat olive oil and butter over medium-high heat. Sear the chicken for about 4-5 minutes per side until golden; remove from pan.
  3. In the same skillet, melt butter and sauté onions for 2 minutes. Add garlic and cook briefly. Pour in chicken broth, stirring well.
  4. Stir in cream, Parmesan cheese, Italian seasoning, salt, and pepper. Let simmer until thickened.
  5. Return the chicken to the skillet to coat with sauce; cover and cook on low for about 5-7 minutes until fully cooked (internal temperature of 165°F).
  6. Serve over rice and garnish with parsley and extra Parmesan if desired.
