  • 2 tablespoons olive oil (divided)
  • 5 cloves garlic (minced)
  • 1/2 cup julienned sun-dried tomatoes
  • 14.5 ounce can of petite diced tomatoes (drained)
  • 1 tablespoon tomato paste
  • 2 tablespoons granulated sugar
  • 1/2 cup plain 2% or full fat Greek yogurt
  • 1/4 cup sour cream
  • Salt and pepper (to taste)
  • ½ cup grated parmesan cheese
  • 1 1/2 cups baby spinach
  • 3/4 pound dried fettuccine
  • 1 cup reserved pasta water
  • Crushed red pepper flakes (optional)

Instructions

  1. Cook fettuccine in a large pot of boiling water with olive oil until al dente. Drain, reserving 1 cup of pasta water.
  2. In a small bowl, blend Greek yogurt and sour cream; set aside.
  3. In a skillet, heat olive oil over medium-high heat and sauté minced garlic and sun-dried tomatoes for 2 minutes.
  4. Lower heat to medium-low; add diced tomatoes, tomato paste, and sugar. Stir until combined.
  5. Gradually whisk in the yogurt-sour cream mixture; simmer until thickened (about 5–7 minutes).
  6. Season with salt and pepper, then stir in Parmesan cheese and spinach until wilted.
  7. Toss cooked fettuccine with the sauce, adding reserved pasta water as needed for consistency.
